Vegan MoFo Day4:Peanut Butter Blondies!
Okay,so in like February I really really really wanted to make peanut butter blondies after seeing a bunch of people posting pictures of them on the flickr group Chocolate and Peanut Butter,but non of them were vegan,and I couldn't find a good recipe,and sometimes veganizing brownies/blondies can be really hard because texture is everything.Okay,well not everything,but I don't want cake or something lame like that went I want a chewy fudgy brownie or blondie.
So then I found the Peanuttiest Blondie recipe from a Dorie Greenspan book,which,people had veganized!So I had every intent on making them,but forgot about them until this past week when thinking about all the delicious things that I'd do with peanut butter.
Actually,in a college application a question was to explain your trivilalities and my friend Stella who I was complaining to about not finding a peanut butter blondie recipe told me that that should be my triviality.But then I wrote about jars.
So i looked at the veganized recipe and was kind of disappointed because it used en-r-g egg replacer,which yeah might work,but it does have a taste and occasionally makes things dry.And it dumb and expensive anyways.It seems kind of exclusive and unnecessary.Anyways,so I decided I'd do it differently.Then looking at the recipe I decided that i'd do a bunch of stuff differently.Like adding way more peanut butter for example.So,it kind of became a different recipe,but my starting point was the Peanuttiest Blondies,and I guess you could say I was inspired by them.Anywhoo,they turned out delicious.
Really fudgy,but with a crisp top.Kevin ate like half a pan.
I brought them to Jess's vice presidential debate party,and yeah,they ruled the school.I also puked all over her living room floor,but that's a different story.Yay!
i'll get around to posting the original recipe and what I did differently soon!

Vegan Diva has a good recipe for PB blondies, too. Actually, maybe it's the same one...?
