FUDGE

Fudge is so good.And Rich.And nurtionally deficient.and delicious.and really really good.I made this for the EarthSave potluck on Sunday night.I won another book.cool.

Chocolate Fudge
1/3 cup vanilla soymilk
1 1/4 cup organic sugar
2 tablespoons non hydrogenated vegetable shortening
1 cup dark choclate chips
1 teaspoon vanilla extract
1 teaspoon chocolate extract

Heat sugar and soymilk over high heat, stirring constantly until boiling.After mixture has been over heat for 7 minutes and has already started to boil, remove from heat and stir in shortening,chocolate chips,and extracts.Stir intensely until smooth and thicker.Pour inot a greased pan.I've made it in 8x8 inch pan,9x4 inch pan and muffin pans.Put in fridge and allow to cool atleast an hour before cutting up and eating.Doesn't need to be refridgerated.
Also,try using different exrtacts.Mint fudge is really good.

Boil sugar and milk for 7 minutes?

Or start timing 7 minutes when you turn on the flame?
