This Ginger-Macadamia-Coconut Carrot Cake is hands down the best carrot cake ever.Screw cream cheese frosting,vegan or not.The recipe id from Vegan With a Vengeance(what else is new)and it was the first dessert I ever made from the book back in early 2006.I made it tonight for an EarthSave Canada potluck and it won the prize for best dessert.Now I have another Vegetarian Manifesto.
The cake is so good that I made 2 of them.One <3 shaped and one O shaped.

Un-Cakey Pumpkin Cookies.They really were,it's my own recipe,but everyone who's made it except Isa(who would've made changes,but w/e,what does she know)had problems and said they got less than un-cakey results!I will fix that,though.
Wheat-Free Chocolate Chip Cookies.Recipe from the PPK.My dad and little brother surprisingly loved these.
Fudgy Wudgy Blueberry Brownies from the now-available and ever awesome Veganomicon.These are my new favourite brownies,btw.
Chewy Chocolate Chocolate Chip Cookies from Veganomicon.With vegan white chocolate chips.
and with peppermint Rittersport which melted the cream filling and got all caramel-y.
Green Tea Pistachio Pound Cake.The recipe is the poundcake from Veganomicon,but I added matcha and pistachios because I was inspired my mel c's trip to M cafe,which I know,makes awesome desserts.
Coconut Custard Pie from Veganomicon

Best carrot cake ever - you were so right. I'm so glad you made me take a piece for later; nobody had as good of a lunch as I did today, hah! I'll probably only be at Earthsave for an hour on Thursday, but if you want to go grocery shopping before, that'd work for me.

i have been meaning to write.... how are you? how is school? all is
well i presume? all is okay here - R and i went for a trip to Nova
Scotia for 10 days and had a much needed break. the food sucked, but
it was an amazing trip nonetheless. it was my birthday on the 14th (i
turned 31!!) and R made me cupcakes!! i was so shocked as me really
isn't a baker. at all. he turns muffins into scones without trying. he
is really not skilled and yet he pulled them off beautifully.
how was Taste of Health?
anyhow, gotta go drive a friend to the airport right now. write when
you get the chance.

ps - we were adopted by a stray cat a month ago. i named him Diego. he
was really skinny and kinda scared but we are all plumping him up (my
landlady lives underneath me and she has sorta co-adopted him). it is
hard to have him aroudn in some ways, but also important i think.
I wish I could afford to bake that much! You're like a super-incredible baking machine! Impressive.
I think I'll buy Veganomicon for the fudge wudgy blueberry brownie recipe alone. Yum.

I've been itching to make the Vcon brownies, so seeing that you recommend them I'll definitely have to scratch that itch.
