Vegan MoFo Day#11-Peanut Butter and Coffee pt.3-Gimme! Coffee and Gimme a Peanut Butter Chocolate Chunk Cookie




i usually don't buy pastries/cookies at coffee shops,and actually usually don't buy them all that often considering how much crap baked goods are out there and i know how to bake and am really picky.but i have an affinity for all things peanut butter,and i was at gimme!coffee,which i also really like,and was actually,the soho one,was the first cafe i went to when i moved here,and i had an excellent espresso and gibraltar,and generally their espresso,leftist,is really smoky and had a,not musty,but deep dried fruity taste,like prunes or dried figs,and anyways,what i'm saying is that i really like gimme!coffee and they happen to sell a vegan peanut butter chocolate chunk cookie from this chick bakes bakery,which is actually really good.it's really dense and moist and chewy.which was surprising.so,if i ever fell the need for a peanut butter cookie to go along with my espresso,i'm all set.

Vegan MoFo Day#10-Peanut Butter,Mango,and Roasted Squash Wrap/Sammich

Peanut Butter,Mango,and Roasted Squash Wrap.

so from late march until early august,as you might know,i was obsessed with fresh mangoes.i would eat at least one a day,some
days upwards of three.and i'm no talking about the little ataulfo,yellow ones.i mean the big,red,mexican(usually) ones.and i would go
out of my way every single day to make sure that i had ripe,ready to eat ones.i was totally obsessed.thinking about it now it's pretty
ridiculous,but i guess i was really into mango?i even had/have a 'mango' set on my flickr.
anyways,i stopped after i had really bad digestive problems in early august and even had to stay the night in the ER, and had to stop
eating all fruits besides bananas for 2 weeks,and mango and watermelon just made my stomach turn so i stopped eating them.and
than last weekend,after exactly 2 months actually,i found an amazingly perfectly ripe mango and just bought it.here in nyc it's not
so hard to find ripe mangoes-every single bodega practically sells them.but w/e.

so i made these wraps.with roasted butternut and kabocha squash,mango,and crunchy,salted peanut butter.
everyone thought that this was weirder than the pickles and peanut butter,but surprisingly goes really well.
i ate mango and squash,and often peanut butter,together a lot over the summer,so i knew it would.there's coarse sea salt on these,too to balance out the sweetness of the super ripe mango.anyways,super interesting flavours,and very salty/sweet.

Vegan MoFo Day#9-Peanut Butter and,or In Cereal


granola.

cereal just AIN'T cereal if it's a)doesn't have chunks/slices of bananas in it and b)there no smear of peanut butter on the side of the bowl to smear each spoonful in.true story.cereal and peanut butter just go together.the milk gets all sugary and peanut buttery from the grains and butter...it's lovely,and so nice to drink.try it!if you hate soggy cereal,it even makes that part enjoyable.








granola soaked with almond milk over night in the fridge,peanut butter-ed.

speaking of sorry cereal,i personally love it,and really really love granola,soaked overnight in the fridge with almond milk,like fill a bowl of cereal just over the top with almond milk and it will soak it all over over the night,and turn out like oatmeal.i was almost out of cereal last weekend and didn't even need to empty it into a bowl!

creamy like oatmeal,but more flavourful,and maybe easier?oatmeal is pretty easy,though.



i like adding banana as it's soaking,makes it even sweeter.

and with a bit melty/room temp peanut butter afterwards on top,just splooging into every spoonful of soggy,sloppy oats,is just perfect!

Vegan MoFo Day#8-a Match Made in Heaven...I mean Sweden...Peanut Butter & Speculoos Spread!


Peanut Butter & Speculoos-ed Bagel.
Speculoos spread is basically a really amazing nut butter that actually made from freaking spicy suagr cookies(!!!) instead of nuts,and that tastes like IKEA in the best way possible.it's similar to eating liquified/pastified cookies and peanut butter.

it's from sweden/the netherlands and i was lucky enough to have amanda do a package swap with me earlier this year so i could get my paws on some.i made her/sent her maple peanut butter cups.i first tried this at melissa's house in san francisco back in februar,and probably blogged about it then,because seriously,it's amazing!

actually,i made speculoos danishes at melisser's!yes yes,probaby the second best way to enjoy the stuff.

it's really sweet,but not in a horrible way.and the best way to eat it is with salted crunchy peanut butter to balance it out a bit.this sammich was best dipped in almond milk and let gotten soggy...yum.it's also amazing on ripe bananas.and by itself with a spoon.

Vegan MoFo Day#7-7 Jars of White Chocolate Peanut Butter & White Chocolate Peanut Butter Blondies!


White Chocolate Chocolate Chip Peanut Butter Blondies.

i can't believe that i never actually posted about this.
back at the end of march i scored 7 jars of peanut butter & co's white chocolate wonderful peanut butter for only $0.99 a jar.i was actually out early before seeing bonnie 'prince' billy play at the vogue and the choices in yaletown was discontinuing all their pb&co peanut butter,so these were only $0.99!and didn't expire until november or something,but that doesn't matter because i went through 1 a week eating it plain except for baking some blondies and really incredible peanut butter oatmeal cookies with white chocolate chunks/chips.

the peanut butter blondies are a tester recipe from the (very forthcoming) all-vegan cookie cook book written by isa chandra moskowitz and terry hope romero,which i posted a bunch about testing months ago,and was even staying with isa when testing was in high gear and was forced to do horrible,menial tasks like go to new seasons three times in one day,and anyways,the book comes out in november,is gonna rule,and you should buy it.
this white chocolate peanut butter is amazing and tatses like reese's pieces candy,so it's no surprise that these were amazing,on a different level with the wcw.

i am not being irrational when i say that these are my second all time faves.maybe even first.my first still being the gigantoid peanut butter oatmeal cookies.i'm gonna make those and these and compare.holy crap.i of course was expecting these to be good,because they're peanut butter,but no,these are blowing my find.they're like fudge.but unlike fudge you can have a big piece and there's something more to it,like more substantial and more going on than sugar overload.(no offense to fudge)
i cut a little square of them and ate it hot from the oven and it was like melting in my mouth and i felt like "i need someone to be experiencing this with me".they're super dense and just perfect,and i used salted peanuts and they're so sweet and salty....ahhh.i'm gonna make the gigantoid pbs and these again and compare.wow.
i was not expecting this.yeah,this morning i was excited to see a pb recipe to test,but i had no idea my world would be turned upside down like this.
i have vanilla cranberry pb and am gonna make these again with that and add dried cranberries to the batter.
also,these would be amazing warm with vaniller ice creams. "

Vegan MoFo Day#6-Peanut Butter & Coffee pt.2-Peanut Butter-Tasting Coffee?!

well...not quite.though this cup of coffee,which was one of the first roasts actually roasted by cafe grumpy themselves was delicious,it didn't taste like peanut butter,i thought that it juuuust might since it was described as having a:
"peanut brittle"
peanut brittle sweetness.

and it totally did-the cup had a salty/sweet sweetness and aftertaste that was was slightly spicy and warming,like cinnamon,and very nutty,and really,the 'peanut brittle' comparison was spot-on.
so,while no,the coffee didn't taste like drinking peanut butter,it shred many qualities that peanut butter beholds,and was incredibly enjoyable nonetheless.i'm actually really excited to try more roasts that grumpy is doing themselves!
and who knows,maybe one day i'll come across a cup of coffee that does taste like drinking liquid peanut butter.for better or worse.

Vegan MoFo Day#5-Peanut Butter,Pickle, and Purple Carrot Sammich


Peanut Butter,Pickle, & Purple Carrot Sammich.

officially the best sammich ever.it was made with caramelized onion focaccia breads,crunchy maranatha peanut butter,kosher dill pickles,grated purple carrots,and curly green kale.all the stuff,sans peanut butter,was from the farmer's market at union square on saturday

the pickles were from rick's picks and were amazing and free,too!i asked the guy if they were selling any singular big ones and he said no,but gave me the jar they were sampling out of,which was pretty full.





i guess some people don't know that carrots are purple?

i love this sammich because every ingredient is just so good.i mean salty and sweet peanut butter,crunchy and sweet crrots,crunchy and somewhat bitter kale,and pickles...pickles rule,and the bread was really big and soft and the caramelized onions really made it,but i think other bread would be good,too.


oh,and i brought blythe a sammich too since about a month ago we were talking about how good peanut butter pickles sammiches are and both her and brad agree that it was amazing,and seriously probably the best sammich ever.
