Ginger-Macadamia-Coconut Carrot Cake & ALOT more!

This Ginger-Macadamia-Coconut Carrot Cake is hands down the best carrot cake ever.Screw cream cheese frosting,vegan or not.The recipe id from Vegan With a Vengeance(what else is new)and it was the first dessert I ever made from the book back in early 2006.I made it tonight for an EarthSave Canada potluck and it won the prize for best dessert.Now I have another Vegetarian Manifesto.
The cake is so good that I made 2 of them.One <3 shaped and one O shaped.

Un-Cakey Pumpkin Cookies.They really were,it's my own recipe,but everyone who's made it except Isa(who would've made changes,but w/e,what does she know)had problems and said they got less than un-cakey results!I will fix that,though.

Toasted Coconut Marshmallows(Sweet & Sara)

Toasted Coconut Marshmallows!the Sweet & Sara ones!they came in the mail for me today!my brother kept berating me since i'd never just eat marshmallows if i wasn't vegan,but these are toasted coconut!and they're incredible.he even said they're better than any non-vegan marshmallow he ever had,but also that a marshmallow is a freakin marshmallow.but these are special because they're toasted coconut!
and i'd like to thank jess for posting pics of these last month and making me feel such a desire to get them.
i like these way more than the vegansweets ones,which are just okay.these are more like marshmallows,but just a little bit moister,so they're like a candy,but still clearly a marshmallow.

The Best Pumpkin Muffins

Yesterday there was a demonstration at Aberdeen Center in Richmond to protest the opening of Pappa's Fur there.There was a fashion show and me and some/the other Liberation BC people disrupted it,and were pretty successful,though it was no Cloverdale Rodeo.
Anyways,I made everyone pumpkin muffins since we all met early-ish.
The Best Pumpkin Muffins,actually.From Vegan with a Vengeance,obviously.

PIE PIE PIE & Peanut Butter Cinnamon Rolls

Today is Canadian Thanksgiving.How dumb is that?Way too early.

November 6th,the original day of Canadian day of Thanksgiving,became a national holiday in 1879.In 1957,Parliament moved Thanksgiving to the second Monday in October to steer clear of the post-war celebration of Remembrance day.

So I made a lot of pies.

Sweet Potato Pie with 3 Nut Topping
from Vegan with a Vengeance.I made this to bring to Joanne and Glenn's house Saturday night,but her brother ended up coming to visit and they had to do family stuff,so I brought it to them while they were doing turkey outreach outside of the downtown IGA on Saturday afternoon in the pouring cold rain.They're such stars.

Pecan Pie.Recipe courtesy of the lovely todd x from the ppk.I changed a couple of things but oh well.It was awesome.Everyone really liked it,myself included.I don't know what non vegan pecan pie is like but I don't care because this was soo good.From what I was described it being like,this semmed right.yum.

Pumpkin Pie.Pumpkin is the best part of autumn.This is the only pumpkin pie recipe anybody needs.So good.I used a homemade graham cracker crust for it.

So this weekend is EarthSave Canada's annual vegetarian food festival Taste of Health.This will be my 3rd year attending and volunteering.But this year I will have cakes for sale!Awesome,huh?only a few but hey...

PEANUT BUTTER BOMBED.

I made a Peanut Butter Bomb Cake for Daniel for his 18th birthday.Inspired by Vegan Treats,obviously.Which btw is amazing,but not here in Vancouver.So I made a double layer chocolate cake(with choc chips)with peanut butter mousse in the middle,on the sides,and in balls on top.It was a but hard at first to get the balls of mousse nice and ball-y on top,but it worked out.And then a crap load of ganache from the vctotw recipe.I think I made 2.5 batches of ganache.I also added some crumbled peanut butter oatmeal cookies(vwav)in a crevice on top and that was coated in ganache,too.So there was a nice crunch in a couple of spots.My grandma loved it.And so did Dan.Well,he did ask me to make this particular cake for him,so i'd expect he'd like it.Dad and Patrick both had big pieces too,which made me so happy since last year Patrick only ate the ice cream cake I made Dan when I lied and said it wasn't vegan.That was funny,Daniel only had one piece and planned on eating it the next day when he got back from Bowen Island but Sarah and Ryan had eaten all of it.ANYWAYS,this is the peanut butter bomb cake I made and i'm very proud and it's delicious.I wish that I had had Danielle Konya's genius idea to create this cake,but oh well.

Big Gigantoid Crunchy Peanut Butter-Oatmeal Cookies from Vegan With a Vengeance.Possibly my favourite cookies ever?

Big Gigantoid Crunchy Peanut Butter-Oatmeal Cookies


2 cups all-purpose flour
2 cups rolled oats
2 t. baking powder
1 t. salt
3/4 cup canola oil
3/4 cup natural crunchy peanut butter
1 cup granulated sugar
1 cup brown sugar
1/2 cup vanilla soy milk
2 t. vanilla extract

1. Preheat oven to 350F. Lightly grease two cookies sheets.
2. Toss together the flour, oats, baking powder, and salt in a medium mixing bowl. In a large mixing bowl, mix together the oil, peanut butter, sugars, soy milk, and vanilla.
3. Add the dry ingredients to the wet and mix. The dough should be very difficult and moist. Pack a 1/3-cup measuring cup with dough, pop out and roll into a firm ball. Flatten just barely on a prepared cookie sheet, spacing the dough balls well apart. Lightly grease the bottom of your glass; press the cookies to flatten to a 1/2-inch thickness. Bake for 12-15 minutes till cookies have puffed a bit and we lightly browned. Allow to cool for at least two minutes before moving off the cookie sheet.
